Your Coffee Is 98% Water (So Let's Talk About Water)

Here's the uncomfortable math: a cup of brewed coffee is roughly 98% water. We obsess over sourcing and roasting the other 2%, and then most of us pour whatever comes out of the tap over it. If your coffee tastes different at home than it does at the shop, water is the first suspect — before the beans, before the brewer, before your technique.

TDS, without the chemistry degree

TDS — total dissolved solids — is simply a measure of everything dissolved in water, in parts per million (ppm). Rainwater is nearly zero. Some Florida tap water is over 300 ppm and smells faintly of a swimming pool. The specialty-coffee sweet spot is around 150 ppm of the right minerals — enough dissolved “stuff” to pull flavor from the grounds, not so much that the water shows up already full.

Minerals are flavor's taxi service

This is the part we love: minerals don't just sit in the water, they bind to flavor compounds and carry them into your cup.

  • Magnesium is the extraction workhorse — it latches onto the fruity, bright, complex compounds and drags them out of the grounds. Water with healthy magnesium makes juicy, articulate coffee.
  • Calcium pulls its weight too, adding body and roundness.
  • Bicarbonate is the buffer — it neutralizes acidity. A little keeps coffee from tasting sharp; too much flattens a bright Ethiopian into cardboard.

Too few minerals (distilled water) and extraction goes weak and sour. Too many (hard tap water) and the water arrives with no seats left in the taxi — flat, dull, muted coffee. And chlorine? Chlorine just tastes like chlorine.
