The 11% Rule: Moisture, Mold, and Why We Measure Water Activity
Some of what we do is romantic — farm visits, cupping tables, first crack echoing off the roastery walls. And some of it is a moisture meter and a spreadsheet. This post is about the spreadsheet part, because it quietly protects everything else.
Green coffee is alive (enough to spoil)
A green coffee bean isn't a dead pebble — it's a seed holding water, sugars, and enzymes. How much water it holds decides its fate in storage. Dried too little, it becomes a petri dish. Dried too much, it turns brittle and flavor-flat, and it roasts erratically. The industry's safe harbor is roughly 10–12% moisture content, and we buy right around 11% — the calm center of that window.
The enemy: mold
The reason this matters isn't abstract. Coffee that's too wet — or stored badly in Florida humidity, which we know a little about — invites mold and fungal activity. Beyond ruining flavor with musty, papery, “baggy” taints, certain molds produce compounds nobody wants in a food product. The defense isn't fancy: buy properly dried coffee, verify it, store it cool and dry, and roast it while it's fresh. We check the numbers on arrival, because a lab sheet from the exporter is a promise and a meter reading is a fact.
Water activity: the sharper tool
Moisture content tells you how much water is in the bean; water activity (aw) tells you how available that water is — whether it's free enough for microbes to use it. Two lots can share the same moisture percentage while one sits safely inert and the other is one humid month from trouble. We like to see water activity in the mid-0.50s. When both numbers agree the coffee is stable, we know it will store gracefully and roast consistently — the drying phase of every roast literally starts from that measurement.
Why you should care
You'll never see these numbers on our labels, and that's the point — their job is to make sure nothing about them is interesting. But when a coffee tastes clean and precise eight months after harvest, this unglamorous diligence is why. Quality in coffee isn't one dramatic decision; it's a hundred boring measurements taken seriously.
