Extraction 101: Acids First, Sugars Second, Bitterness Last

Brewing coffee is a negotiation between hot water and roasted seeds — and here's the secret that makes every brewing problem fixable: coffee gives up its flavors in a predictable order.

The order of extraction

  1. Acids and fruit come out first. The bright, sparkling, fruity compounds are small and dissolve fast. A brew cut short is dominated by them — which is why under-extracted coffee tastes sour, sharp, and thin.
  2. Sugars come next. The caramels and sweetness built during roasting dissolve in the middle of the brew. This is the heart of the cup — balance lives here.
  3. Bitter compounds and heavy fats come last. Push the brew too far and you drag out the dry, woody, bitter end of the spectrum. Over-extracted coffee tastes hollow and harsh at the same time.

So the whole game is: extract through the acids, capture the sugars, and stop before the bitterness. Sour cup? You stopped too early — extract more. Bitter cup? You went too far — extract less. That one diagnostic fixes most home coffee.

The four dials you control

  • Water temperature. Hotter water extracts faster and more completely. Around 195–205°F is the classic window — cooler tilts sour, hotter risks bitterness.
  • Contact time. How long water and coffee stay together — four minutes in a French press, thirty seconds in an espresso basket. More time, more extraction.
  • Agitation. Stirring, swirling, turbulent pouring — movement refreshes the water at the surface of every particle and speeds extraction. A gentle pour and a vigorous stir produce different cups from identical recipes.
  • Amount of contact (grind size). Grinding finer creates vastly more surface area touching water — faster extraction. Coarser means less contact — slower. This is the most powerful dial on the panel, which is why we bang on about good grinders so much.

One variable at a time

The dials interact — grind finer and you've also slowed the water flowing through a pour-over, adding contact time for free. So change one thing per brew, taste, and adjust. Two or three cups in, you'll land somewhere lovely — and you'll know exactly how you got there, which means you can do it again tomorrow.
