Anaerobic, Carbonic, Co-Fermented: A Field Guide to Exotic Coffee Processing

In our processing primer we covered the classics — washed, natural, honey. Now for the frontier: the methods turning processing from preservation into flavor design. This is where coffee currently gets its most exciting (and occasionally most divisive) cups.

Anaerobic fermentation

Seal coffee cherries in a tank without oxygen, and fermentation changes character completely — different microbes take over, producing intense, unusual flavor compounds: think cinnamon, boozy fruit, silky texture. Our own Primer Paso is a natural anaerobic — the whole first harvest fermented this way before drying. Controlled well, anaerobic adds depth without losing the coffee underneath.

Carbonic maceration

Borrowed straight from Beaujolais winemaking: whole cherries go into a tank flushed with CO₂, and fermentation begins inside each intact fruit. The results are almost impossibly juicy and candy-like. When you taste a coffee that reminds you of wine gums or sangria, carbonic maceration is often the trick.

Co-fermentation: the wild west

The newest frontier: fermenting coffee with something — selected wine or beer yeasts for precision, lactic bacteria for creamy texture, or actual fruit in the tank. Purists argue about where enhancement ends and flavoring begins; we think the honest answer is transparency — say exactly what was done, then let the cup vote. Banana leaves and wild microbes

Our favorite recent example comes from Andrés's farm: a semi-washed lot fermented wrapped in banana leaves, which carry their own wild yeasts and lactic-acid bacteria — a fermentation starter growing twenty feet from the tank. It captures why this era excites us: the same producer who once couldn't process his own coffee is now running experiments a research lab would envy — on his own land, chasing a place among the world's best experimental processors.

How to approach these coffees

Expect them to taste unlike coffee's usual lane — that's the point. Brew them simply (a pour-over shows them best), share them with someone, and check the label for the method. The best exotic lots aren't stunts; they're processing used as a composer's instrument. The weird stuff is where the future gets auditioned.
